CHEF josh’s aglio olio

This simple pasta recipe will make your
#meatfreemonday
exciting!it’s so tasty that you may want it every night of the week!
With only 8 ingredients needed, (and most of them already in your pantry) this recipe is as fast and easy to prepare as it is delicious!
Aglio Olio by Chef Josh
Ingredients:
  • Your favourite pasta (fresh is best)
  • 30 grams parsley
  • 3 garlic cloves
  • 100ml good quality extra virgin olive oil
  • 70ml white wine
  • 1/2 lemon, juiced
  • 3 grams pecorino
  • 15 grams parmesan 
Steps:
  • Thinly slice your garlic
  • Get your salted boiling water ready. It’s a good idea to cook the pasta as you are making the sauce so you can serve it quickly and hot. 
  • Chop your parsley (use a sharp knife, you don’t want to bruise your parsley!)
  • Add your oil to a pan on medium/high, you want to cook this sauce quite quickly
  • Saute your garlic just until golden 
  • Deglaze the pan with the wine and cook it down for 2 minutes
  • Add your parsley and chilli flakes and give it a good mix
  • Crack some fresh pepper in the sauce and season with sea salt
  • Start to add your favourite cooked pasta
  • Give your pasta a good toss in the sauce and a splash of the pasta water
  • Toss in your grated cheese, mix well and squeeze half a lemon in there
  • Plate the pasta, finish with fresh grated parmesan, and enjoy!
