CHEF josh hsu’s aglio olio
This simple pasta recipe will make your #meatfreemonday exciting!it’s so tasty that you may want it every night of the week!
With only 8 ingredients needed, (and most of them already in your pantry) this recipe is as fast and easy to prepare as it is delicious!

Aglio Olio by Chef Josh Hsu
Your favourite pasta (fresh is best)
30 grams parsley
3 garlic cloves
100ml good quality extra virgin olive oil
70ml white wine
1/2 lemon, juiced
3 grams pecorino
15 grams parmesan
Thinly slice your garlic
Get your salted boiling water ready. It’s a good idea to cook the pasta as you are making the sauce so you can serve it quickly and hot.
Chop your parsley (use a sharp knife, you don’t want to bruise your parsley!)
Add your oil to a pan on medium/high, you want to cook this sauce quite quickly
Saute your garlic just until golden
Deglaze the pan with the wine and cook it down for 2 minutes
Add your parsley and chilli flakes and give it a good mix
Crack some fresh pepper in the sauce and season with sea salt
Start to add your favourite cooked pasta
Give your pasta a good toss in the sauce and a splash of the pasta water
Toss in your grated cheese, mix well and squeeze half a lemon in there
Plate the pasta, finish with fresh grated parmesan, and enjoy!
